Before making this Amaretto cake, check your bottle, does it say it is made with amaretto flavoring or is it pure amaretto. If you get a chance, try Lazzaroni, a true Italian Amaretto!

Ingredients you will need:
1 (5.1 ounce) packageinstant vanilla pudding mix
2 tablespoonsamaretto liqueur
1/2 cupwater
1/2 cupvegetable oil
1/4 teaspoonalmond extract
1/2 cupamaretto liqueur
1 cupsifted confectioners'
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
In a large bowl, combine cake mix, eggs, instant vanilla pudding, water, oil, almond extract, and 2 tablespoons of the amaretto; blend together well. Pour batter into the prepared pan.
Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of cake comes out clean. Remove cake from oven and while it is still warm, poke holes in the surface. Drizzle with the Amaretto Glaze, insuring that some of the glaze fills the holes. Let the cake cool for at least 2 hours before removing from the pan.
To make Amaretto Glaze: Sift the confectioners' sugar, and combine it with the remaining 1/2 cup amaretto. Blend until smooth. You may add more amaretto as needed.

I had the pleasure of tasting a Captain Morgan Rum Cake at a recent birthday party, for a very close friend. I think this recipe from GroupRecipes.com has a few more ingredients, and sounds just as delicious! Give it a try and see what you think.
Ingredients:
· ---CAKE---
· 2/3 cup of Granola
· (1) 18-1/2 ounce yellow cake mix
· 8 oz. sour cream
3/4 cup brown sugar
· 4 eggs
· 1/4 cup canola oil
· 1/2 cup Captain Morgan Spiced Rum
· ---GLAZE---
· 1/2 cup butter
- 2 teaspoons corn starch
- 1/2 cup Granola cereal
- 1/2 cup crushed walnuts
· 3/4 cup brown sugar
· 1/2 cup dark rum ( Myers or Goslings)
Instructions:
Cake: Preheat oven to 325 degrees F. Grease and flour 12-cup Bundt pan. Sprinkle granola on bottom of pan.
Combine brown sugar, sour cream and one egg. Beat until blended. Sift cake mix and alternately add cake mix and one egg at a time. Blend until mixed and continue to slowly add the remaining ingredients including oil and rum. Beat for 2 minutes on high with electric mixer. Pour into prepared pan.
Bake for 1 hour. Cool in pan. Invert on serving plate. Prick top with fork. Drizzle glaze over top of cake. Use brush or spoon to put extra dripping back on cake.
Glaze: Melt butter in saucepan. Stir in brown sugar, granola cereal and walnuts. Dissolve cornstarch in a few tablespoons of water and add to mixture. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Note: The rum will cause steam. Be careful not to burn yourself.

Orange glaze: In a medium bowl, mix confectioners sugar with 3 tablespoons orange juice.

Directions
Heat oven to 350 degrees F. Grease and flour a 12-cup Bundt pan.
In a mixing bowl, combine cake mix, pudding mix, eggs, oil, water, vodka and Kahlua; beat for 10 minutes by hand or 5 minutes with electric mixer.
Bake in prepared pan 55 to 60 minutes, or until cake tests done. Cool in pan for 5 minutes, then invert on wire rack to cool. Once cake is cooled, poke holes in cake with a chopstick and slowly pour icing over cake.
For Icing: In saucepan, combine sugar, butter and water; bring to a boil, stirring until sugar is dissolved. Remove from heat. Just before pouring over the cake, stir in vodka and Kahlua.

I remember the first time I tried eggnog. For some reason, I thought it would taste good with Captain Morgan Spiced Rum....I was right.
So, for my favorite eggnog drink recipe, it is pretty basic.
3 parts eggnog (store bought non-alcoholic eggnog)
1 part Captain Morgan Spice Rum
Mix ingredients together thoroughly. Drink and enjoy.
However, if you want to get serious, you can make your own homemade eggnog. This one, I picked up from About.com. It makes about 16 drinks and the prep time is about 25 minutes.
Beat egg yolks, 1/4 cup sugar, nutmeg, salt and vanilla together until very thick and light yellow.
Slowly beat in brandy (rum and whiskey are also popular alternatives) and milk.
Cover and chill overnight.
Shortly before serving, beat the egg whites to soft peaks.
Gradually beat in remaining 1/4 cup sugar, beat this mixture to soft peaks again, creating a meringue-like cream.
Then slowly pour this cream over the chilled brandy mixture, folding in gently.
Serve the eggnog in a mug or punch cup and grate nutmeg over the top for garnish.

Blend on high speed.
I had never liked pina coladas, until I had a neighbor make a homeade pina colada for me. These are much better than using just a drink mix and adding alcohol. Give it a try, and remember to drink responsibly!

As the holiday approaches, many of us can't help to stop and ask, "how should I stock my bar for Thanksgiving Day?"

This is a blood orange margarita recipe using lime juice, tequila and triple sec. You can only make one drink with this recipe, but you can adjust the ingredient proportions accordingly if you want to make more than one drink. If you want to serve blood orange margaritas to ten people, multiply all the ingredients here by ten, and so on.

This is a blood orange martini recipe using vodka and cointreau. Remember that alcohol should be consumed in moderate quantities. This a pretty strong martini, utilizing 3oz of vodka for just one drink. Also, this recipe is only for one single drink. If you want to serve, say, six drinks to six guests, you simply need to multiply the ingredient list by six. Enjoy your blood orange martini–may the crimson tint of this martini and the beautiful taste of the blood orange overwhelm you and fill you up!

The sweet tart pomegranate flavor coupled with the fresh citrus taste of hand-squeezed blood oranges gives the cocktail its beautiful deep red color and delicious bite. Garnished with pomegranate seeds and a sugar coated slice of blood orange, the Vampire Blood Martini is the perfect accessory to your cape and fangs.
Vampire Blood
1.5 oz vodka
1.5 oz pomegranate juice
1.5 oz blood orange juice (1 blood orange)
1 tablespoon agave syrup
1 lime wedge
Mix all ingredients in martini shaker with ice. Squeeze blood orange and lime wedge. Shake vigorously for 15 seconds and pour into chilled martini glass. Garnish with pomegranate seeds and sugar coated blood orange slice.
Looking for some Halloween drink recipes, I came across this one called Witch's Brew on the Food Network's web site.
Witch's Brew
Here's what you'll need:
1 (6-ounce) package lime gelatin
2 cups boiling water
3 cups chilled pineapple juice
1 (2 liter) bottle chilled lemon-lime soft drink or ginger ale
2 cups chilled vodka
1 large black plastic cauldron
1 punch bowl that fits inside the cauldron
1 plastic hand, sterilized in hot water
1 block dry ice
Directions
Pour the gelatin mix into a large bowl. Slowly stir in the boiling water. Stir at least 2 minutes, until the gelatin is completely dissolved. Stir in the pineapple juice. Let cool to room temperature.
Wearing heavy duty gloves or using tongs, place the block of dry ice in the bottom of the cauldron. (Dry ice will burn skin, so handle it with gloves and tong. Keep away from kids and pets!)
Use an ice pick to break the block into smaller chunks, if necessary.
Fill the cauldron with just enough water to cover the dry ice. It will begin to "steam."
Place the punch bowl inside the cauldron, on top of the dry ice. The cauldron will appear to be magically smoking.
Entrap the sterilized rubber hand between the cauldron and the punch bowl, squeezing it tight so the hand appears to be reaching out of the mist for help. Hot-glue the hand to the cauldron, if necessary, to hold it in place.
Carefully pour the drink mixture into the punch bowl. Slowly add the chilled vodka and lemon-lime soda or ginger ale. Stir gently to mix.

Hmm, you're thinking you like spiced rum, but you would like to be able to do more with it.
One of my favorite ways to drink Captain Morgan Spiced Rum is with Vanilla Coke. I usually mix mine 1 part rum to 3 parts of cola. However, some people like theirs a little stronger and others a little weaker. Mix to your desired taste.
Here's a recipe for a Long Island Spice Tea, straight from the Captain Morgan web site...
Ok add 10ml Smirnoff Vodka into a cocktail shaker, add 10ml Gordon’s Gin to the shaker, 10ml Jose Cuervo tequila to the shaker, add 10ml of Grand Marnier to the shaker and the 10ml of Captain Morgan ® Original Spiced.
Add 50ml of equal parts water, sugar, fresh lemon juice & fresh limejuice. Give it a shake. Add Cola and pour over ice into a tall glass.

Another Captain Morgan mixed drink recipe is the Captain Pepper. Once again, this is simply Captain Morgan Spiced Rum mixed with Dr. Pepper soda pop. Mix to taste.
When making a simple mixed drink with just soda and an alcoholic beverage, begin by putting your ice in the glass first. Next add the alcohol, and finally pour in the soda. This order usually distributes the alcohol into the soda equally.

Simply pour 7 ounces of Captain Morgan in a large glass of ice.
Add 10 ounces of Coke.
Add 1 ounce of lime juice.
Stir and enjoy!
One that sounds delicious to me, the Jamaican Sunset. Ingredients are as follows:
1-1/4 ounce Captain Morgan Spiced Rum.
1/2 ounce Myers Dark Rum
1-1/2 ounce orange juice
1-1/2 ounce pineapple juice
1 ounce sweet and sour mix
Pour the ingredients into a shaker, shake, and strain into a large glass. Or you can pour into martini glasses, garnish with fruit and share with a friend!
Directions:
For a layered effect, pour the
grenadine into a chilled martini glass. Pour vodka over a spoon slowly.
Next, slowly pour in the Blue Curaçao. The blue will float below the
vodka.

Patriotic Margarita
To make this festive cocktail, follow these simple steps.
1. Puree thawed frozen strawberries.
2. Blend 2 tablespoons each of the strawberry puree, dark rum, coconut milk, pineapple juice, fresh lime juice, and ½ cup crushed ice in a blender until smooth.
3. Pour 2 to 4 tablespoons HPNOTIQ into a glass, and top with 2 to 4 tablespoons of the strawberry mixture.

If you would like to try your own twist on a Red, White and Blue drink for Indepence Day, here are a couple of tips to help keep the layers separated.
First of all, when picking your layers, the drinks should be layered by the most sugary. Here's an example of a non-alcoholic drink recipe for the holiday.
1/3 cup Cranberry juice
1/3 cup Sprite
1/3 cup Blue Gatorade
You would pour the cranberry juice in first, as it has about 30 grams of sugar. Then the Sprite which is a shy second with 26 grams of sugar, and finally a far third the Blue Gatorade contains only 5 grams.
Another tip for pouring the layers into your Red, White and Blue shooter....Obviously, you are going to pour the second layer above the first, however trying to pour it directly onto a chunk of ice that is above the previous layer or pouring it over a spoon held upside down, will help keep your layers separated.

2 parts Pinnacle Key Lime Whipped
1 part Lemonade
Splash of fresh lime juice
Shake with ice and strain into a chilled martini glass. Garnish with a lime wedge.
Melonade
1 part Pinnacle Cucumber Watermelon
2 parts Lemonade
Mix in a glass with ice and garnish with a lemon wedge.
Peachy Lemonade
1 part Pinnacle Peach
2 parts Lemonade
Splash of Cranberry juice
Mix in a glass with ice and garnish with an orange slice.
Bourbon Street Lemonade
3 parts Absolute New Orleans
1 part Mango Napa Valley Puree
4 parts Lemonade
Combine in a cocktail shaker, shake vigourously. Pour into a cocktail glass. Serve over ice with diced mango.
Classic Lemonade
2 oz Burnetts Citrus Vodka
Sweet & Sour Mix
Lemon Lime Soda
Pour citrus vodka over ice. Fill glass with sour mix and top off with lemon lime soda.
Loopade
1 part Three Olives Loopy Vodka
2 parts Lemonade
Splash of grenadine.
Mix all ingredients together with ice. Serve on the rocks.
Pom-Ade
2 parts Three Olives Pomegranate Vodka
4 parts Lemonade
Mix in a glass filled with ice and garnish with a lemon wedge.
Laid Back Lemonade
1 1/2 parts Three Olives Vodka
1/2 part Orange Juice
1/4 part Fresh Lemon Juice
1/4 part Grapefruit Juice (optional)

3 Parts Pink Grapefruit Juice
1 Wedge Pink Grapefruit
Fill a rocks glass with with ice cubes. Add all ingredients. Garnish with pink grapefruit.

1-1/2 Part Pineapple Juice
2 Parts Cranberry Juice

1 part Amaretto Almond Liqueur

Lynchburg Lemonade, typically made with Jack Daniels whiskey, is a great summer time drink. Here 's the drink recipe for you.
This recipe makes 2 quarts.
1 - pitcher full of ice
2/3 cup - Country Time Lemonade
3 - shots Triple Sec
4 1/2 - shots Jack Daniels
Pour lemonade over ice. Pour in triple sec and whiskey. Fill with water. Stir with a wooden spoon.

It seems, whenever I am on vacation, even though my body is relaxing, my mind is still in perfect motion. This new drink recipe, I created myself, while on vacation at Gulf Shores Plantation, in Gulf Shores, Alabama. I call it the Lagoon.
Here's the drink recipe for the Lagoon:
Fill one martini glass with ice.
Shake one tablespoon of Country Time lemonade powder mix over the ice.
Pour in 1-1/2 ounces of Alize Bleu.
Pour in 1/2 ounce of Triple Sec.
Fill with water and stir, watching the arrival of your very own Lagoon.
