Amaretto Cake Recipe

Before making this Amaretto cake, check your bottle, does it say it is made with amaretto flavoring or is it pure amaretto.  If you get a chance, try Lazzaroni, a true Italian Amaretto!

    I had the pleasure of tasting a Captain Morgan Rum Cake at a recent birthday party, for a very close friend. I think this recipe from GroupRecipes.com has a few more ingredients, and sounds just as delicious! Give it a try and see what you think.

    Ingredients:

    · ---CAKE---
    • · 2/3 cup of Granola
    • · (1) 18-1/2 ounce yellow cake mix
    • · 8 oz. sour cream
    • 3/4 cup brown sugar
    • · 4 eggs
    • · 1/4 cup canola oil
    • · 1/2 cup Captain Morgan Spiced Rum
    · ---GLAZE---
    • · 1/2 cup butter
    • - 2 teaspoons corn starch
    • - 1/2 cup Granola cereal
    • - 1/2 cup crushed walnuts
    • · 3/4 cup brown sugar
    • · 1/2 cup dark rum ( Myers or Goslings)
    Instructions:

    • Cake: Preheat oven to 325 degrees F. Grease and flour 12-cup Bundt pan. Sprinkle granola on bottom of pan.
    • Combine brown sugar, sour cream and one egg. Beat until blended. Sift cake mix and alternately add cake mix and one egg at a time. Blend until mixed and continue to slowly add the remaining ingredients including oil and rum. Beat for 2 minutes on high with electric mixer. Pour into prepared pan.
    • Bake for 1 hour. Cool in pan. Invert on serving plate. Prick top with fork. Drizzle glaze over top of cake. Use brush or spoon to put extra dripping back on cake.
    • Glaze: Melt butter in saucepan. Stir in brown sugar, granola cereal and walnuts. Dissolve cornstarch in a few tablespoons of water and add to mixture. Boil 5 minutes, stirring constantly. Remove from heat and stir in rum. Note: The rum will cause steam. Be careful not to burn yourself.

    Screwdriver Cake Recipe

    This Screwdriver Cake Recipe sounds really simple, and sounds really yummy from yummly.com.

    Ingredients:



    • 18 ounce pkg yellow cake mix
    • 3-1/2 ounce pkg instant vanilla pudding mix
    • 3/4 cup orange juice
    • 1/2 cup vodka 
    • 1/4 cup vegetable oil
    • 3 eggs
    • 1 cup confectioners' sugar
    • 3 tbsps orange juice (for the glaze)
    1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour Bundt pan.
    2. In a large bowl, combine cake mix, pudding mix, 3/4 cup orange juice, vodka, oil and eggs. Beat until smooth, and pour into Bundt pan.
    3. Bake at 350 degrees F (175 degrees C) for 45 minutes, or until toothpick inserted into middle of cake comes out clean. Cool 10 minutes in pan, then turn out onto wire rack. Glaze with orange glaze.
    4. Orange glaze: In a medium bowl, mix confectioners sugar with 3 tablespoons orange juice.

    Kahlua Vodka Cake Recipe

    Here's a Kahlua-Vodka Cake Recipe from CDKitchen.com.

    Ingredients

    1 box (18 ounce size) yellow cake mix (with pudding in mix)
    1 small box instant chocolate pudding mix
    4 eggs
    1 cup vegetable oil
    3/4 cup water
    1/4 cup vodka
    1/4 cup Kahlua or other coffee-flavored liqueur
    ***Icing***
    1 cup sugar
    1/2 cup butter
    1/4 cup water
    2 tablespoons vodka
    2 tablespoons Kahlua or other coffee-flavored liqueur


    Directions

    Heat oven to 350 degrees F. Grease and flour a 12-cup Bundt pan.

    In a mixing bowl, combine cake mix, pudding mix, eggs, oil, water, vodka and Kahlua; beat for 10 minutes by hand or 5 minutes with electric mixer.

    Bake in prepared pan 55 to 60 minutes, or until cake tests done. Cool in pan for 5 minutes, then invert on wire rack to cool. Once cake is cooled, poke holes in cake with a chopstick and slowly pour icing over cake.

    For Icing: In saucepan, combine sugar, butter and water; bring to a boil, stirring until sugar is dissolved. Remove from heat. Just before pouring over the cake, stir in vodka and Kahlua.

    Jack Daniels Cake Recipe

    Here is a Jack Daniels Cake Recipe, probably my favorite, especially since I enjoy butterscotch so well!  And of course, can't forget Jack!

    Ingredients:
    • 1 (18 1/4 ounce) package yellow cake mix
    • 1 (3 1/2 ounce) package vanilla instant pudding mix
    • 5 eggs, slightly beaten
    • 1/2 cup milk
    • 1/2 cup Jack Daniels Whiskey
    • 3/4 cup margarine, softened
    • 1 (6 ounce) package butterscotch chips
    • 1 cup chopped walnuts
    Directions
    1. Mix cake and pudding mix together.
    2. Add eggs, milk, whiskey and magarine.
    3. Beat long and hard BY HAND.
    4. Add butterscoth mosels and nuts, reserving 1/2 cup of each.
    5. Pour batter into greased 13 x 9 x 2 inch pan.
    6. Sprinkle remaining morsels and nuts over batter.
    7. Bake @ 350 degrees 45-60 minutes.

    Eggnog Drink Recipes

    I remember the first time I tried eggnog.  For some reason, I thought it would taste good with Captain Morgan Spiced Rum....I was right. 

    So, for my favorite eggnog drink recipe, it is pretty basic. 

    3 parts eggnog (store bought non-alcoholic eggnog)
    1 part Captain Morgan Spice Rum

    Mix ingredients together thoroughly.  Drink and enjoy.

    However, if you want to get serious, you can make your own homemade eggnog.  This one, I picked up from About.com.  It makes about 16 drinks and the prep time is about 25 minutes.

    Ingredients you will need:

    • 6 eggs, separated
    • 1/2 cup super fine sugar
    • 1/4 tsp salt
    • 2 tsp vanilla
    • 2 cups brandy
    • 1 cup milk
    • Nutmeg (use for garnish also)
    1. Beat egg yolks, 1/4 cup sugar, nutmeg, salt and vanilla together until very thick and light yellow.
    2. Slowly beat in brandy (rum and whiskey are also popular alternatives) and milk.
    3. Cover and chill overnight.
    4. Shortly before serving, beat the egg whites to soft peaks.
    5. Gradually beat in remaining 1/4 cup sugar, beat this mixture to soft peaks again, creating a meringue-like cream.
    6. Then slowly pour this cream over the chilled brandy mixture, folding in gently.
    7. Serve the eggnog in a mug or punch cup and grate nutmeg over the top for garnish.
    To make your life easier, you might try a premixed eggnog, that already includes the alcohol like the Pennsylvania Dutch Eggnog. (Note:  In Indiana we call the Pennsylvania Dutch, Amish.)  Pennsylvania Dutch Eggnog is a blend of whiskey, rum and brandy blended with fresh dairy cream.

    Pina Colada Drink Recipe

    There are a number of drink mixes for pina Coladas, however if you would like to make one homeade.  Here is a great homeade Pina Colada Drink Recipe for you!

    1 ounce white rum
    1 ounce natural syrup
    3/4 cup pineapple juice
    1 ounce coconut cream
    2 cups chopped pineapple
    3 ice cubes

    Blend on high speed. 

    I had never liked pina coladas, until I had a neighbor make a homeade pina colada for me.  These are much better than using just a drink mix and adding alcohol.  Give it a try, and remember to drink responsibly!

    UV Cake Vodka Recipes

    If you have tried UV Cake Vodka, then you know how good it tastes straight in a shot or on the rocks.  And if it tastes that good on it's own, imagine how great it will taste in these drink recipes!

    1 part UV Cake Vodka

    Strawberry Cake Jello Shots

    2 cups boiling water
    1 cup UV Cake Vodka
    1 cup Triple Sec
    1 large box (6 oz.) strawberry jello

    Begin by dissolving 1 large box (6oz) of strawberry jello in 2 cups of boiling water. Add 1 cup of UV Cake Vodka and 1 cup Triple Sec.   Pour into shot cups, allow to cool and add lids.  Refridgerate for at least 2 hours before serving.  Makes about 30 jello shots.

    Hot Chocolate Cake

    1 shot UV Cake Vodka
    8oz hot chocolate

    Mix hot chocolate as normal, pour in 1 shot of UV Cake Vodka, stir thoroughly.  If desired, top with marshmallows.
